I had a fun week at school! Did you know that each Friday I bring Paige’s Produce to my school? We pack up produce bags as a class. I will share some pictures next week and on instagram. This weekend we are gleaning FIGS! Can’t wait to share with you.

Pickled Hot Peppers- Serrano Pepper Recipe

Ingredients
1 lb serrano peppers
1 ¼ cup white vinegar
½ cup water
1 ¼ cup sugar
3 garlic cloves
Instructions
Cook 1 ¼ cup vinegar, ½ cup water, and 1 ¼ cup sugar until sugar is completely dissolved and mixture reaches a soft boil.
Remove from heat and cool until room temperature.
Slice 3 garlic cloves very thin.
Slice 1 lb serrano peppers.
Add pepper and garlic into a container. Pour vinegar mixture. Cover and refrigerate for 3 days for full flavoring.
Notes
Note: Traditionally this recipe is made with jalapeños. You can do that also if you like. But my friends and I like the heat... the Serrano peppers are not only hotter, they also have a bit of stronger flavor that go really well with the sweet and tartness of this recipe.
Note: The spicy sweet vinegar is good poured on stewed cabbage, collards, and turnip greens.
Tomato Recipes: Oven Roasted Tomatoes Recipe

INGREDIENTS
2 lb Roma tomatoes 2 to 3 garlic cloves, minced
Kosher salt and black pepper
2 tsp fresh thyme, stems removed
1 tsp sumac
½ tsp dry chili pepper flakes, I used Aleppo Pepper which is milder
Extra virgin olive oil, I used Private Reserve Greek extra virgin olive oil
Crumbled feta cheese, optional
INSTRUCTIONS
Preheat the oven to 450 degrees F.
Place the tomato halves in a large mixing bowl. Add minced garlic, salt, pepper, fresh thyme, and spices. Drizzle a generous amount, about ¼ cup or more, quality extra virgin olive. Toss to coat.
Transfer the tomatoes to a baking sheet with a rim. Spread the tomatoes in one single layer, flesh side up.
Roast in your heated oven for 30 to 35 minutes or until the tomatoes have collapsed to your desired doneness.
Remove from heat. If you are planning to serve it soon, feel free to garnish with more fresh thyme and a few sprinkles of feta cheese. Enjoy warm or at room temperature.
Jalapeno Poppers

Ingredients
12 jalapeno peppers
6 ounces cream cheese softened
1 teaspoon garlic powder
4 ounces sharp cheddar shredded
2 tablespoons chives finely chopped
¼ cup Panko bread crumbs
1 tablespoon butter melted
Instructions
Preheat the oven to 400°F.
Wearing gloves, slice the jalapenos in half lengthwise. Using a small spoon, scoop out the seeds and membranes.
In a bowl mix cream cheese, garlic powder, cheddar cheese and chives (if using).
In a separate bowl, combine Panko crumbs and melted butter.
Fill jalapenos with the cheese mixture. Top with crumbs.
Place on a baking pan and bake 18-22 minutes or until golden.
Cool 5-10 minutes before serving.
